Indulge in the sweet, nutty flavors of Makroudh, a delightful North African treat made with semolina, dates, and a hint of cinnamon. Perfect for a festive gathering or a cozy afternoon snack with tea.

- 500 grams semolina
- 100 grams butter
- 1 cup water
- 200 grams dates
- 1 teaspoon cinnamon
- 1 cup honey
- oil for frying vegetable oil
Method

In a large mixing bowl, combine the semolina and melted butter. Mix well until the semolina is fully coated.

Gradually add water to the semolina mixture while kneading, until you form a soft dough. Let it rest for about 15 minutes.

In another bowl, mix the mashed dates with cinnamon until well combined. This will be the filling for the Makroudh.

Divide the dough into equal portions, then flatten each portion into a rectangle. Place a spoonful of the date mixture along one edge and roll it up to form a log.

Shape the rolled dough into a diamond or traditional shape, then repeat with the remaining dough and filling.

In a deep pan, heat the vegetable oil over medium heat. Fry the Makroudh until golden brown on all sides, about 3-4 minutes each.

Once fried, remove the Makroudh from the oil and let them drain on paper towels. While still warm, dip them in honey to glaze.
