- 1 cup dried pigeon peas
- 1 cup maize flour
- 1 medium onion
- 2 cloves garlic
- 1 tablespoon vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup water
Method

Rinse the soaked pigeon peas and place them in a pot with 1 cup of water. Bring to a boil and then simmer until soft, about 30 minutes.

While the peas are cooking, finely chop the onion and garlic.

In a frying pan, heat the vegetable oil over medium heat. Sauté the onion and garlic until golden brown.

Once the pigeon peas are cooked, drain them and add to the frying pan with the sautéed onion and garlic.

Stir in the maize flour, salt, and black pepper, mixing well to combine all ingredients.

Shape the mixture into small cakes or patties and place them on a tray.

In the same frying pan, add more oil if needed and fry the patties until they are golden brown on both sides, about 4-5 minutes each side.

Remove the patties from the oil and drain on paper towels before serving.
