Savor the warmth of Mahshi, a delightful Middle Eastern dish where tender zucchini are stuffed with spiced ground beef and rice, simmered in rich vegetable broth. Perfect for a cozy family dinner or a special gathering.

- 453.6 g ground beef
- 1 medium onion
- 2 cloves garlic
- 1 tbsp tomato paste
- 1 tsp cinnamon
- 1 tbsp fresh parsley
- 6 pieces zucchini
- 4 cups vegetable broth

Rinse the rice under cold water until the water runs clear, then soak it in water for 30 minutes. Drain and set aside.

In a large bowl, mix the ground beef, drained rice, chopped onion, minced garlic, tomato paste, cinnamon, and parsley until well combined.

Hollow out the zucchini carefully, leaving about a 1/2 inch thick wall. Stuff each zucchini with the rice and meat mixture, leaving a little room at the top as the rice will expand during cooking.

In a large pot, place the stuffed zucchinis upright. Pour the vegetable broth over them, ensuring they are mostly covered. Bring to a boil, then reduce heat and simmer for about 60-70 minutes.

Check occasionally and add more broth or water if necessary to prevent sticking.

Once the zucchinis are tender and the filling is cooked through, remove from heat and let rest for a few minutes before serving.
