Indulge in the creamy delight of Mahalabia, a fragrant Middle Eastern milk pudding infused with rose water and vanilla. Perfect for a sweet ending to a dinner party or a refreshing treat on a warm day.

Ingredients

  • 2 cups milk
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1 teaspoon rose water
  • 1/4 teaspoon vanilla extract
  • 1/4 cup water
  • as needed for garnish chopped nuts
  • as needed for garnish coconut flakes

Method

  1. 1

In a saucepan, combine milk and sugar. Heat over medium heat until the sugar dissolves.

  2. 2

In a small bowl, mix cornstarch with water to create a slurry.

  3. 3

Once the milk is warm, slowly add the cornstarch mixture while stirring continuously to avoid lumps.

  4. 4

Keep stirring until the mixture thickens and comes to a gentle boil, then remove from heat.

  5. 5

Stir in rose water and vanilla extract, mixing well.

  6. 6

Pour the mixture into serving bowls and let it cool to room temperature, then refrigerate for at least 2 hours.

  7. 7

Before serving, garnish with chopped nuts and coconut flakes if desired.

  8. 8

Serve chilled and enjoy your delicious Mahabalai!

This mahlebia recipe has quickly become a favorite of mine; it's simpler and creamier than other puddings I've tried. The balance of flavors is delightful, making it a go-to dessert for any occasion.
