Experience the rich flavors of Madfoon, a traditional Middle Eastern dish featuring tender chicken and aromatic basmati rice, infused with spices like cumin and cinnamon. Perfect for a cozy family dinner or a festive gathering.

- 1.5 kg whole chicken
- 3 cups basmati rice
- 4 tablespoons olive oil
- 1 large onion
- 4 cloves garlic
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon cinnamon
- 4 cups water
- Salt to taste salt
Method

Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until golden brown.

Add the minced garlic and sauté for another minute until fragrant.

Add the chicken pieces to the pot, followed by the ground cumin, coriander, cinnamon, and salt. Stir well to coat the chicken with the spices.

Pour in the water and bring to a boil. Reduce the heat, cover, and let it simmer for about 45 minutes until the chicken is cooked through.

Remove the chicken from the pot and set aside. Add the soaked basmati rice to the pot and stir well.

Place the chicken pieces on top of the rice, cover the pot tightly, and cook on low heat for 30-40 minutes until the rice is fully cooked and has absorbed all the liquid.

Once done, gently fluff the rice with a fork and allow it to rest for a few minutes before serving.

Serve the Madfoon hot, garnished with toasted nuts or fried onions if desired.
