Savor the sweet and nutty flavors of Mabuyu, a delightful East African treat made with maize flour, ground nuts, and coconut milk. Perfect for a cozy afternoon snack or a festive gathering with friends and family.
IngredientsWhat you need
- 1 cup maize flour
- 1 cup sugar
- 2 cups water
- 1 cup ground nuts
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 cup coconut milk
- 1 pinch salt
Method
- 1
In a pot, boil 2 cups of water over medium heat.
- 2
Once the water is boiling, gradually add 1 cup of maize flour while stirring continuously to avoid lumps.
- 3
Cook the mixture until it thickens, about 10 minutes, then remove it from heat and let it cool slightly.
- 4
In a mixing bowl, combine the cooled maize mixture, sugar, ground nuts, vanilla extract, baking powder, coconut milk, and a pinch of salt.
- 5
Mix until you have a smooth batter, then pour it into a greased baking dish.
- 6
Bake in a preheated oven at 180°C (350°F) for about 20 minutes or until a toothpick inserted comes out clean.
- 7
Once baked, remove from the oven and allow it to cool before slicing.
- 8
Serve warm or at room temperature, and enjoy your Mabuyu!
