- 3 cups all-purpose flour
- 1 cup semolina
- 1 cup unsalted butter
- 1/2 cup powdered sugar
- 1/2 cup water
- 1 tbsp rose water
- 1 cup dates, pitted and chopped
- 1 tbsp ground cinnamon
Method

In a large mixing bowl, combine the all-purpose flour and semolina.

Add the melted butter and powdered sugar to the flour mixture and mix until it resembles coarse crumbs.

Gradually add the cold water and rose water (if using) until a soft dough forms. Cover and let it rest for 30 minutes.

In a separate bowl, mix the chopped dates with ground cinnamon to prepare the filling.

Preheat your oven to 180°C (350°F).

Divide the dough into small balls about the size of a walnut. Flatten each ball, place a teaspoon of the date filling in the center, and fold the dough over the filling, sealing it well.

Shape the filled dough into a mold if you have one, or leave them as balls. Place them on a baking sheet lined with parchment paper.

Bake in the preheated oven for about 20 minutes or until golden brown. Allow to cool and dust with powdered sugar before serving.
