Indulge in the flaky, golden goodness of Luchi, a beloved Bengali treat perfect for weekend brunch or festive gatherings. These deep-fried flatbreads pair beautifully with spicy curries or sweet chutneys.
IngredientsWhat you need
- 2 cups all-purpose flour
- 1 teaspoon salt
- 2 tablespoons ghee or oil
- 1/2 cup water
- Oil for frying vegetable oil
Method
- 1
In a large mixing bowl, combine the all-purpose flour and salt.
- 2
Add ghee or oil to the flour mixture and mix until crumbly.
- 3
Gradually add water to the flour mixture and knead until a smooth dough forms. Cover and let it rest for 15-20 minutes.
- 4
After resting, divide the dough into small balls (about the size of a golf ball).
- 5
Roll out each ball into thin discs, about 1/8 inch thick.
- 6
Heat vegetable oil in a deep frying pan over medium heat. Fry the rolled discs until they puff up and turn golden brown on both sides.
- 7
Remove the luchi from the oil and place them on paper towels to drain excess oil.
- 8
Serve warm with your choice of curry or vegetable dishes.
