Indulge in the delicate sweetness of Lokum, a traditional Turkish delight infused with rosewater and crunchy nuts. Perfect for sharing during festive gatherings or as a delightful treat with afternoon tea.

- 2 cups granulated sugar
- 1 cup cornstarch
- 1 cup water
- 1 tbsp lemon juice
- 1 tbsp rosewater
- 1/2 cup chopped nuts
- 1/4 cup powdered sugar
- 1/4 cup cornstarch
Method

In a medium saucepan, combine the sugar, 1 cup of water, and lemon juice. Stir over medium heat until the sugar dissolves completely.

In a separate bowl, mix 1 cup of cornstarch with 3 cups of water to create a smooth paste. Gradually add this mixture to the sugar syrup, stirring continuously to prevent lumps.

Continue to cook the mixture on low heat, stirring frequently, until it thickens and becomes translucent, about 30-40 minutes.

Once thickened, remove from heat and stir in the rosewater and chopped nuts (if using).

Pour the mixture into a greased square baking dish and smooth the top. Allow it to cool at room temperature for several hours or overnight.

Once set, dust a clean surface with powdered sugar and cornstarch mixture. Turn the Lokum out onto the surface and cut into small squares.

Dust the pieces with more powdered sugar and cornstarch to prevent sticking. Store in an airtight container.
