Ingredients

  • 1 kg pork shoulder
  • 200 g fatback
  • 4 cloves garlic
  • 2 tablespoons paprika
  • 2 teaspoons black pepper
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1 meter sausage casings

    Soak the sausage casings in water for about 30 minutes to make them pliable.

    In a large bowl, mix together the pork shoulder, fatback, minced garlic, paprika, black pepper, salt, and cumin until well combined.

    Rinse the soaked casings under cold water and then carefully stuff them with the meat mixture, tying off the ends securely.
