Ingredients

  • 1 cup green or brown lentils
  • 1 large onion
  • 2 cloves garlic
  • 1 large carrot
  • 1 stalk celery
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 4 cups vegetable broth

Method

    In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add the minced garlic, diced carrot, and diced celery to the pot. Cook for another 3-4 minutes until the vegetables soften.

    Stir in the rinsed lentils and ground cumin, mixing well to combine all ingredients.
