- 1 cup brown lentils
- 1 medium onion
- 2 cloves garlic
- 2 medium carrots
- 1 medium tomato
- 1 teaspoon cumin
- 4 cups vegetable broth
- 2 tablespoons olive oil

In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.

Add minced garlic and diced carrots to the pot, stirring for another 3-4 minutes until the carrots start to soften.

Stir in the chopped tomato and ground cumin, cooking for an additional 2 minutes until the tomato begins to break down.

Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce heat to low and simmer for about 20 minutes, or until lentils are tender.
