- 4 cups rice
- 1 cup pork skin
- 1 cup green peas
- 1 cup red bell pepper
- 1 tablespoon garlic
- 1 tablespoon cumin
- 1 tablespoon salt

Prepare the pig by cleaning and removing any excess hair. Make a large incision along the belly.

Cook the rice in a pot according to package instructions, then set aside.

In a large mixing bowl, combine the cooked rice, green peas, diced red bell pepper, minced garlic, cumin, and salt. Mix well.

Stuff the rice mixture into the cavity of the pig, then sew the incision closed with kitchen twine.

Place the pig on a large roasting rack over a deep pan to catch drippings. Cook in a preheated oven at 150°C (300°F) for about 6 hours, or until the meat is tender.

During the last hour of cooking, add the pork skin to the top of the pig to achieve a crispy texture.

Once cooked, carefully remove the pig from the oven and let it rest for about 30 minutes before carving.
