Indulge in the warm, spiced flavors of German Lebkuchen, a delightful honey-sweetened cookie enriched with ground almonds and aromatic spices. Perfect for holiday gatherings or cozy winter evenings with loved ones.

- 250 g honey
- 200 g brown sugar
- 200 g all-purpose flour
- 100 g ground almonds
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1 tsp ground cloves
- 2 tbsp lemon zest
- 150 g dark chocolate

In a saucepan, combine honey and brown sugar. Heat gently until the sugar dissolves, then remove from heat and let cool slightly.

In a bowl, mix together the flour, ground almonds, baking powder, cinnamon, and cloves.

Add the cooled honey mixture and lemon zest to the dry ingredients. Stir until a dough forms. If the dough is too sticky, add a little more flour.

Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.

Roll out the dough on a floured surface to about 1 cm thick. Cut into desired shapes and place on the baking tray.

Bake in the preheated oven for about 15 minutes or until lightly browned. Let them cool on a wire rack.

Melt the dark chocolate in a heatproof bowl over simmering water. Once melted, dip the cooled Lebkuchen into the chocolate to glaze.
