Indulge in Laskonky, a delightful Czech meringue treat layered with rich whipped cream and nutty ground walnuts. Perfect for a festive dessert or a sweet afternoon pick-me-up with coffee.

- 300 g granulated sugar
- 1 teaspoon vanilla extract
- 200 g ground walnuts
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon cocoa powder
Method

Preheat your oven to 120°C (250°F) and line a baking sheet with parchment paper.

In a clean mixing bowl, beat the egg whites until soft peaks form. Gradually add granulated sugar while continuing to beat until stiff peaks form and the mixture is glossy.

Gently fold in the vanilla extract and ground walnuts until well combined.

Spoon or pipe the meringue mixture onto the prepared baking sheet into small circles, about 5 cm in diameter.

Bake the meringues for about 60 minutes or until they are dry and can easily peel off the parchment paper. Turn off the oven and let them cool inside for an additional hour.

While the meringues are cooling, whip the heavy cream with powdered sugar until soft peaks form.

Once the meringues are completely cool, sandwich two meringues together with whipped cream in between to create the Laskonky.
