- 600 g lamb or beef, diced
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 medium carrots, sliced
- 2 medium potatoes, peeled and sliced
- 500 ml beef or lamb stock
- 2 sprigs fresh thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper

Preheat your oven to 160°C (320°F).

In a large oven-safe pot, heat the vegetable oil over medium heat. Add the diced lamb or beef and brown on all sides.

Add the chopped onion and minced garlic to the pot, cooking until the onion is soft and translucent.

Stir in the sliced carrots, and then pour in the beef or lamb stock. Add the thyme, salt, and black pepper. Bring to a simmer.

Layer the sliced potatoes on top of the meat and vegetable mixture, overlapping them slightly to create a cover.

Cover the pot with a lid or foil and transfer to the preheated oven. Bake for 2 hours or until the meat is tender.

Remove the lid for the last 20 minutes of cooking to allow the potatoes to crisp up.
