Indulge in the delightful taste of Lamingtons, a classic Australian treat featuring soft sponge cake coated in rich chocolate and rolled in coconut. Perfect for afternoon tea or a sweet dessert to impress guests!

Ingredients

  • 1 cup self-raising flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 2 large eggs
  • 1/2 cup milk
  • 2 cups desiccated coconut
  • 2 cups powdered sugar
  • 1/3 cup cocoa powder

    Preheat your oven to 180°C (350°F) and grease a square cake pan (20 cm x 20 cm).

    In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
