Indulge in the delightful taste of Lamingtons, a classic Australian treat featuring soft sponge cake coated in rich chocolate and rolled in coconut. Perfect for afternoon tea or a sweet dessert to impress guests!
IngredientsWhat you need
- 1 cup self-raising flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter
- 2 large eggs
- 1/2 cup milk
- 2 cups desiccated coconut
- 2 cups powdered sugar
- 1/3 cup cocoa powder
Method
- 1
Preheat your oven to 180°C (350°F) and grease a square cake pan (20 cm x 20 cm).
- 2
In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- 3
Add the eggs one at a time, mixing well after each addition. Then, stir in the milk.
- 4
Gradually add the self-raising flour, mixing until just combined. Pour the batter into the prepared cake pan and smooth the top.
- 5
Bake for 25 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely.
- 6
Once cool, cut the cake into squares. To prepare the icing, mix the powdered sugar and cocoa powder with enough water to make a smooth icing.
- 7
Dip each square of cake into the icing, allowing the excess to drip off, then roll in the desiccated coconut until fully coated.
- 8
Place the coated lamingtons on a wire rack to set. Enjoy your delicious Australian lamingtons!
