- 500 g smoked pork ribs
- 1 medium onion
- 3 cloves garlic
- 1 cup sauerkraut
- 1 liter water
- 1 teaspoon caraway seeds
- -17 °C bay leaf
- to taste salt and pepper
Method

In a large pot, add the smoked pork ribs and cover with water. Bring to a boil and cook for about 10 minutes.

Reduce heat to low and skim off any foam that forms on the surface. Add the chopped onion, minced garlic, caraway seeds, and bay leaf.

Cover the pot and let it simmer for about 2 hours, until the meat is tender.

Add the sauerkraut to the pot and continue to cook for another 30 minutes.

Remove the pork ribs from the pot, shred the meat, and return it to the soup.

Season the soup with salt and pepper to taste. Simmer for an additional 10 minutes.

Serve hot, optionally with a slice of bread or boiled potatoes on the side.
