Experience the heart of Egyptian cuisine with this comforting Kushari, a delightful blend of brown lentils, rice, and pasta, topped with a rich tomato sauce and fragrant cumin. Perfect for a cozy weeknight dinner or a gathering with friends.

- 1 cup brown lentils
- 1 cup rice
- 1 cup small pasta (e.g., elbow macaroni)
- 1 cup tomato sauce
- 2 tablespoons vegetable oil
- 1 large onion
- 1 teaspoon cumin
- Salt to taste salt

In a pot, combine the brown lentils with 3 cups of water. Bring to a boil, then reduce heat and simmer for about 20 minutes until tender. Drain and set aside.

In another pot, cook the rice according to package instructions, usually about 15-20 minutes. Set aside once cooked.

Cook the small pasta in boiling salted water until al dente, about 8-10 minutes. Drain and set aside.

In a skillet, heat the vegetable oil over medium heat. Add the sliced onion and sauté until golden brown and crispy, about 5-7 minutes. Remove from heat and drain excess oil.

In a large serving dish, layer the lentils, rice, and pasta. Pour the tomato sauce over the top and sprinkle with cumin and salt to taste.
