- 2 cloves garlic

Method

Soak the dried white beans in water overnight. Drain and rinse before cooking.

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.

Add the minced garlic and sauté for another minute until fragrant.

Stir in the tomato paste, red pepper flakes, and soaked beans. Mix well to coat the beans.

Pour in the water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 60-70 minutes, or until the beans are tender.
