Savor the heartwarming flavors of Kuru Fasulye, a traditional Turkish bean stew simmered with aromatic garlic, onions, and a hint of spice. Ideal for a cozy weeknight dinner or a comforting meal with friends.

Ingredients

  • 1 cup dried white beans
  • 2 tablespoons olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 1 tablespoon tomato paste
  • 2 cups water
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste Ingredient 8

Method

  1. 1

Soak the dried white beans in water overnight. Drain and rinse before cooking.

  2. 2

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.

  3. 3

Add the minced garlic and sauté for another minute until fragrant.

  4. 4

Stir in the tomato paste, red pepper flakes, and soaked beans. Mix well to coat the beans.

  5. 5

Pour in the water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 60-70 minutes, or until the beans are tender.

  6. 6

Season with salt and pepper to taste. Cook for an additional 10 minutes, stirring occasionally.

  7. 7

Serve hot, ideally with rice or crusty bread.
