In a large mixing bowl, combine the grated potatoes, chopped onion, and fresh herbs if using. Mix well.

Add the beaten eggs, turmeric, salt, and black pepper to the potato mixture. Stir until everything is well combined.

Heat the vegetable oil in a non-stick frying pan over medium heat.

Pour the potato and egg mixture into the pan, spreading it evenly. Cook for about 15-20 minutes until the bottom is golden brown.
