Savor the comforting flavors of Kuku Sibzamini, a Persian potato and herb frittata that's perfect for a cozy weeknight dinner or a delightful brunch. With fragrant turmeric and fresh herbs, it's a dish that warms the soul.

Ingredients

  • 4 medium potatoes
  • 1 small onion
  • 4 large eggs
  • 1 tsp turmeric
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 tbsp vegetable oil
  • 1/4 cup fresh herbs

Method

  1. 1

In a large mixing bowl, combine the grated potatoes, chopped onion, and fresh herbs if using. Mix well.

  2. 2

Add the beaten eggs, turmeric, salt, and black pepper to the potato mixture. Stir until everything is well combined.

  3. 3

Heat the vegetable oil in a non-stick frying pan over medium heat.

  4. 4

Pour the potato and egg mixture into the pan, spreading it evenly. Cook for about 15-20 minutes until the bottom is golden brown.

  5. 5

Carefully flip the kuku using a plate or a flat lid to cook the other side for another 10-15 minutes, until it's fully cooked and golden.

  6. 6

Once cooked, slide the kuku onto a serving platter and let it cool slightly before slicing into wedges.

  7. 7

Serve warm, optionally with yogurt or salad on the side.
