Ingredients

  • 5 large eggs
  • 1 cup fresh herbs (parsley, cilantro, dill)
  • 1 cup spinach
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon turmeric
  • 1/4 cup walnuts

Method

  1. 1

In a bowl, whisk the eggs until well combined.

  2. 2

Add the chopped herbs, spinach, salt, black pepper, and turmeric to the egg mixture and stir well.

  3. 3

Heat the olive oil in a non-stick skillet over medium heat.

  4. 4

Pour the egg and herb mixture into the skillet, spreading it evenly.

  5. 5

  6. 6

Once both sides are cooked through and golden, remove from the heat.

  7. 7

Let it cool slightly before slicing into wedges and serving.
