Kuku Paka is a vibrant Kenyan dish that combines tender chicken simmered in creamy coconut milk with aromatic spices. Enjoy this comforting meal on a cozy weeknight or serve it at your next gathering for a taste of East Africa.

Ingredients

  • 1 kg chicken, cut into pieces
  • 1 cup coconut milk
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp curry powder
  • 1 cup water
  • 1 tbsp fresh coriander, chopped

Method

  1. 1

Heat the vegetable oil in a large pan over medium heat.

  2. 2

Add the chopped onions and sauté until they become soft and translucent.

  3. 3

Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.

  4. 4

Add the chicken pieces to the pan, browning them evenly on all sides.

  5. 5

Sprinkle in the curry powder and mix well, allowing the spices to coat the chicken.

  6. 6

Pour in the coconut milk and water, bringing the mixture to a gentle simmer.

  7. 7

Cover and cook for about 20 minutes, or until the chicken is cooked through and tender.

  8. 8

Garnish with chopped fresh coriander before serving hot with rice or flatbread.
