Experience the rich flavors of Iraqi cuisine with Kubba Mosul, a delightful dish of spiced ground beef encased in bulgur wheat. Perfect for a cozy weeknight dinner or a special gathering with loved ones.

- 2 cups fine bulgur wheat
- 453.6 g ground beef
- 1 medium onion
- 1 tsp cinnamon
- 1 tsp allspice
- 2 tbsp pine nuts
- 3 tbsp cooking oil
- 1 cup water
Method

In a bowl, combine the soaked bulgur wheat with water, mixing well to form a dough.

In a frying pan, heat 2 tablespoons of cooking oil over medium heat. Add the chopped onion and sauté until translucent.

Add the ground beef (or lamb) to the pan, followed by the cinnamon and allspice. Cook until the meat is browned and cooked through, then remove from heat.

Take a small ball of the bulgur dough and flatten it in your hand. Place a spoonful of the meat mixture in the center, then fold the edges over to enclose the filling, shaping it into a ball or oval.

In a large pot, heat the remaining tablespoon of cooking oil. Add the kubbas carefully and fry until golden brown on all sides.

Once fried, add water to the pot, cover, and simmer for around 25-30 minutes until the kubba is cooked through.

Serve hot, garnished with toasted pine nuts if desired.
