- 2 cups fine bulgur wheat
- 1 cup ground beef or lamb
- 1 medium onion, finely chopped
- 2 tbsp olive oil
- 1 tsp cinnamon
- 1 tsp allspice
- 4 cups chicken or beef broth
- 1 tsp salt

Soak the bulgur wheat in water for 30 minutes until it softens, then drain it well.

In a skillet, heat the olive oil and sauté the chopped onion until translucent. Add the ground beef or lamb, cinnamon, allspice, and salt, and cook until the meat is browned. Let it cool.

In a bowl, combine the soaked bulgur, the meat mixture, and mix well. If the mixture is too dry, add a little water to help bind it together.

With damp hands, take a small amount of the bulgur mixture and shape it into a small ball or patty, making a small indentation in the center.

In a large pot, bring the chicken or beef broth to a gentle simmer. Carefully drop the kubba into the broth and cook for about 15-20 minutes until they float to the surface.

Once cooked, use a slotted spoon to remove the kubba and place them on a serving plate.
