- 200 g beef fat
- 5 cloves garlic
- 1 tbsp salt
- 1 tbsp black pepper
- 1 tbsp paprika
- 1 cup cold water
- 6 pieces hog casings

In a large bowl, combine the minced pork shoulder and chopped beef fat.

Add minced garlic, salt, black pepper, and paprika to the meat mixture. Mix thoroughly.

Gradually add cold water to the mixture, continuing to mix until it is well combined and sticky.

Rinse the soaked hog casings under cold water and prepare them for filling.

Using a sausage stuffer, carefully fill the casings with the meat mixture, taking care not to overfill.

Twist the filled casings into individual sausages and tie the ends securely with kitchen twine.

Preheat your grill over medium heat. Grill the kovbasa for about 10-15 minutes per side, or until fully cooked and nicely browned.
