Savor the warmth of Kousa Mahshi, a delightful Middle Eastern dish where tender zucchini are stuffed with a savory blend of ground beef and rice, simmered to perfection. Ideal for a cozy family dinner or special gatherings.
IngredientsWhat you need
- 8 medium zucchini
- 500 grams ground beef
- 1 cup rice
- 2 tablespoons tomato paste
- 1 teaspoon allspice
- 1 teaspoon salt
- 4 cups water
Method
- 1
Begin by preparing the zucchini. Cut off the ends and use a peeler or corer to hollow them out carefully, leaving the outer shell intact.
- 2
In a mixing bowl, combine the ground beef, soaked rice, tomato paste, allspice, and salt. Mix well until all ingredients are evenly incorporated.
- 3
Stuff the hollowed zucchini with the meat and rice mixture, pressing down gently to fill each one completely.
- 4
In a large pot, add the water and arrange the stuffed zucchini upright. Bring to a simmer over medium heat and cover the pot.
- 5
Cook for about 30-35 minutes, or until the zucchini is tender and the rice has cooked through. Check occasionally to ensure there is enough liquid, adding more water if necessary.
- 6
Once cooked, remove from heat and let rest for a few minutes before serving.
- 7
Serve the Kousa Mahshi warm, with some of the cooking liquid drizzled over the top if desired.
