Indulge in the comforting flavors of Japanese korokke, crispy potato and beef croquettes that are golden-fried to perfection. Ideal for a cozy weeknight dinner or a delightful snack with friends.

Ingredients

  • 2 large potatoes
  • 100 g ground beef
  • 1 small onion
  • 1 egg beaten egg
  • 1/2 cup panko breadcrumbs
  • Salt and pepper to taste seasoning
  • Oil for frying vegetable oil

Method

  1. 1

Boil the cubed potatoes in salted water until tender, about 15 minutes. Drain and mash until smooth.

  2. 2

In a skillet, sauté the chopped onion in a little oil until translucent. Add the ground beef and cook until browned. Season with salt and pepper.

  3. 3

Combine the mashed potatoes, sautéed beef and onion mixture, and beaten egg in a bowl. Mix well until all ingredients are combined.

  4. 4

Shape the mixture into small patties or rounds, about 1 cm thick.

  5. 5

Coat each patty in panko breadcrumbs, pressing lightly to adhere.

  6. 6

Heat vegetable oil in a deep pan or fryer to 180°C (350°F). Fry the patties in batches until golden brown and crispy, about 3-4 minutes per side.

  7. 7

Remove from oil and drain on paper towels. Serve hot with tonkatsu sauce or your favorite dipping sauce.
