- 1 kg potatoes
- 1 cup all-purpose flour
- 1 large egg
- 1 tsp salt
- 1 tsp black pepper
- 4 tbsp butter
- 1 tbsp fresh parsley
Method

Boil the potatoes in salted water until tender, about 15 minutes. Drain and allow to cool slightly.

Mash the potatoes until smooth and allow to cool completely.

In a large bowl, combine the cooled mashed potatoes, flour, beaten egg, salt, and black pepper. Mix until a dough forms.

Flour a clean surface, then roll the dough into a long log, about 1 inch thick. Cut into 1-inch pieces.

Bring a pot of salted water to a boil. Drop the kopytka into the boiling water and cook until they float to the surface, about 2-3 minutes.

Using a slotted spoon, remove the kopytka and set aside to drain.

In a skillet, melt the butter over medium heat and lightly sauté the kopytka until golden brown, about 5 minutes.

Serve hot, garnished with chopped parsley.
