Savor the rich flavors of Koofteh, a Persian dish of tender meatballs infused with fragrant herbs and spices, served over fluffy rice. Perfect for a cozy weeknight dinner or a special gathering with loved ones.
IngredientsWhat you need
- 500 grams ground lamb or beef
- 1 cup rice
- 1 medium onion
- 1 cup fresh herbs
- 1 teaspoon turmeric
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons tomato paste
Method
- 1
Rinse the rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.
- 2
In a large mixing bowl, combine the ground lamb or beef, soaked rice, chopped onion, fresh herbs, turmeric, salt, and black pepper.
- 3
Mix all the ingredients thoroughly until well combined. If desired, add the tomato paste for additional flavor.
- 4
Shape the mixture into large meatballs (about the size of a tennis ball) and place them on a plate.
- 5
Preheat the grill to medium-high heat. Once heated, place the meatballs on the grill and cook for about 25-30 minutes, turning occasionally until they are browned and cooked through.
- 6
Remove the Koofteh from the grill and let them rest for a few minutes before serving.
- 7
Serve hot with grilled vegetables, flatbread, and yogurt on the side.
