Savor the vibrant flavors of Kontomire, a traditional Ghanaian dish made with tender cocoyam leaves, rich groundnut paste, and a hint of palm oil. Ideal for a comforting weeknight dinner or a special gathering with friends.

Ingredients

  • 500 grams kontomire (cocoyam leaves)
  • 1 medium onion
  • 2 tablespoons groundnut (peanut) paste
  • 1 tablespoon palm oil
  • 1 cup water

Method

  1. 1

Wash the kontomire leaves thoroughly in cold water to remove any dirt or impurities.

  2. 2

Chop the kontomire leaves into smaller pieces and set aside.

  3. 3

In a pot, heat the palm oil over medium heat and sauté the chopped onion until translucent.

  4. 4

Add the groundnut paste to the pot and stir well, allowing it to cook for about 2 minutes.

  5. 5

Stir in the chopped kontomire and water, and bring to a simmer. Cook for about 20 minutes until the leaves are tender.

  6. 6

Season with salt to taste and adjust the consistency with more water if necessary.

  7. 7

Serve hot with rice or any preferred side dish.
