Savor the refreshing taste of Kongguksu, a chilled Korean noodle dish made with creamy mung bean broth and topped with crisp cucumber and green onions. Ideal for hot summer days or a light weeknight dinner.

- 1 cup dried mung beans
- 4 cups water
- 1 cup soba noodles
- 1 tbsp sesame oil
- Salt to taste salt
- 1 tbsp chopped cucumber
- 1 tbsp chopped green onion
Method

Rinse the soaked mung beans and place them in a pot with 4 cups of water. Bring to a boil and then simmer for about 10 minutes until soft.

Drain the cooked mung beans and blend them with a little bit of the cooking water until smooth. Strain this mixture through a fine sieve to separate the liquid from the solids.

In a separate pot, cook the soba noodles according to the package instructions. Drain and rinse under cold water to stop the cooking process.

In a bowl, combine the mung bean broth with sesame oil and salt to taste.

Divide the cooked soba noodles into serving bowls and pour the mung bean soup over them.
