- 500 grams potatoes
- 200 grams all-purpose flour
- 1 large egg
- 1 teaspoon salt
- 400 grams plums
- 2 tablespoons sugar
- 50 grams butter
- 2 tablespoons breadcrumbs
Method

Boil the peeled potatoes in salted water until tender, about 15-20 minutes. Drain and mash them until smooth.

In a bowl, mix the mashed potatoes, flour, beaten egg, and salt until a soft dough forms. If the dough is sticky, add more flour as needed.

Take a small piece of the dough and flatten it in your palm. Place a half of a pitted plum in the center and sprinkle with sugar. Fold the dough around the plum to form a ball.

Bring a large pot of salted water to a boil. Carefully drop the knedle into the boiling water and cook until they float to the surface, about 5-7 minutes.

Once cooked, remove the knedle with a slotted spoon and place them on a plate.

In a small saucepan, melt the butter and toss the knedle in the melted butter and breadcrumbs for added flavor.

Serve warm, optionally drizzled with more melted butter and sprinkled with extra sugar.
