Warm your soul with a comforting bowl of Kimchi Nabe, a vibrant Korean stew brimming with spicy kimchi, tender pork belly, and silky tofu. Perfect for a cozy weeknight dinner or a gathering with friends.

Ingredients

  • 2 cups kimchi
  • 200 grams tofu
  • 150 grams pork belly
  • 4 cups dashi broth
  • 1 cup shiitake mushrooms
  • 1 cup green onions
  • 2 tablespoons gochujang
  • 1 tablespoon soy sauce

Method

    In a large pot, heat the dashi broth over medium heat until it starts to simmer.

    Add the sliced pork belly to the pot and cook until it's browned, about 5-7 minutes.

    Stir in the kimchi and gochujang, cooking for another 5 minutes to allow the flavors to meld.

    Add the cubed tofu and sliced shiitake mushrooms to the pot, simmering for an additional 10 minutes.
