- 1 kg lamb or beef shank
- 3 cups basmati rice
- 1 large onion
- 4 cloves garlic
- 2 tablespoons ghee
- 1 tablespoon ground cumin
- 1 tablespoon ground coriander
- 1 teaspoon cinnamon powder
- 5 cups water
- Salt to taste salt
Method

In a large pot, heat the ghee over medium heat. Add the chopped onion and sauté until golden brown.

Add the minced garlic to the pot and sauté for another minute until fragrant.

Add the lamb or beef chunks to the pot and brown on all sides.

Stir in the ground cumin, ground coriander, cinnamon powder, and salt. Mix well.

Pour in enough water to cover the meat. Bring to a boil, then reduce the heat and let it simmer for about 1 hour, or until the meat is tender.

Once the meat is tender, remove it from the pot and set aside. Strain the broth and return it to the pot.

Add the soaked basmati rice to the strained broth. Bring to a boil, then reduce the heat, cover, and cook for about 20 minutes or until the rice is cooked through.

Serve the rice on a large platter topped with the tender meat. Garnish as desired with fried onions or nuts.
