Savor the rich flavors of Khoresh Karafs, a Persian stew that beautifully marries tender lamb with fresh herbs like parsley and mint. Ideal for a cozy family dinner or a special gathering, this dish warms the soul.
IngredientsWhat you need
- 500 grams lamb or beef, cut into cubes
- 2 tablespoons vegetable oil
- 2 medium onions, chopped
- 1 teaspoon turmeric
- 1 bunch celery, chopped
- 1 bunch parsley, chopped
- 1 bunch mint, chopped
- 4 cups water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Method
- 1
In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they become translucent.
- 2
Add the meat cubes to the pot and brown on all sides. Stir in the turmeric, salt, and black pepper.
- 3
Pour in the water, cover the pot, and bring to a boil. Reduce the heat to low and let it simmer for about 1 hour.
- 4
After an hour, add the chopped celery, parsley, and mint to the pot. Stir well and continue to simmer for another 30 minutes.
- 5
Check the seasoning and adjust with more salt or pepper if needed. Let it cook until the meat is tender and the flavors meld together.
- 6
Once done, serve the Khoresh Karafs over steamed rice, garnished with additional herbs if desired.
