- 500 grams beef or lamb
- 1 large onion
- 2 cups split yellow peas
- 2 tablespoons tomato paste
- 1 teaspoon ground turmeric
- 1 teaspoon ground cinnamon
- 4 cups water
- 1 large potato

Method

Heat a large pot over medium heat and add the chopped onions. Sauté until they become translucent.

Add the beef or lamb cubes to the pot and cook until browned on all sides.

Stir in the turmeric, ground cinnamon, salt, and black pepper, mixing well to coat the meat.

Add the soaked split yellow peas and the tomato paste. Pour in the water, bring the pot to a boil, then reduce the heat to low.

Cover the pot and let it simmer for about 90 minutes, stirring occasionally until the meat and peas are tender.

While the khoresh simmers, fry the potato pieces until golden brown and crispy. Set them aside for garnish.
