Savor the warmth of Khichuri, a comforting Indian one-pot dish made with fragrant Basmati rice, nutritious moong dal, and vibrant mixed vegetables. Ideal for cozy weeknight dinners or rainy days, it brings a taste of home to your table.
IngredientsWhat you need
- 1 cup Basmati rice
- 1/2 cup Moong dal (yellow split gram)
- 1 medium Onion, sliced
- 1 teaspoon Ginger paste
- 1 teaspoon Turmeric powder
- 1 teaspoon Cumin seeds
- 2 cups Water
- Salt to taste
- 1 tablespoon Ghee or oil
- 1 cup Mixed vegetables (like peas, carrots, and potatoes)
Method
- 1
Rinse the Basmati rice and Moong dal under cold water until the water runs clear. Drain and set aside.
- 2
Heat ghee or oil in a large pot over medium heat. Add cumin seeds and let them splutter.
- 3
Add sliced onions and sauté until they turn golden brown. Then add the ginger paste and sauté for another minute.
- 4
Stir in the turmeric powder and mixed vegetables. Cook for about 3-4 minutes until the vegetables start to soften.
- 5
Add the rinsed rice and dal to the pot. Mix well and cook for another 2-3 minutes.
- 6
Pour in the water and add salt to taste. Bring it to a boil, then reduce the heat to low and cover the pot.
- 7
Cook for about 20 minutes or until the rice and dal are tender and the liquid is absorbed. Stir occasionally.
- 8
Once cooked, turn off the heat and let it sit covered for a few minutes before serving. Fluff with a fork and enjoy warm.
