Indulge in the rich and aromatic flavors of Khao Soi, a traditional Thai curry noodle soup featuring tender chicken, creamy coconut milk, and a hint of lime. Perfect for a cozy weeknight dinner or a comforting weekend feast.

Ingredients

  • 400 grams chicken thighs
  • 2 tablespoons vegetable oil
  • 1 onion chopped
  • 4 cloves garlic
  • 2 tablespoons Khao Soi curry paste
  • 400 ml coconut milk
  • 500 ml chicken broth
  • 250 grams egg noodles
  • 1 tablespoon lime juice
  • to taste salt
  • to taste spring onions
  • to taste lime wedges

Method

    Heat vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add the minced garlic and sauté for another minute until fragrant.

    Stir in the Khao Soi curry paste and cook for about 2 minutes, allowing the flavors to bloom.

    Add the chicken pieces to the pot and cook until they are browned on all sides, about 5-7 minutes.

    Pour in the coconut milk and chicken broth, bring to a simmer, and let it cook for about 20 minutes, or until the chicken is tender.

    While the soup is simmering, cook the egg noodles according to the package instructions. Drain and set aside.
