Indulge in the sweet and creamy delight of Khao Niao, a traditional Thai sticky rice dessert infused with coconut milk and pandan. Perfect for a cozy evening treat or a festive gathering with friends and family.

- 2 cups sticky rice
- 1 cup coconut milk
- 1 teaspoon salt
- 2 tablespoons sugar

- 1 sprig fresh pandan leaves

Rinse the sticky rice under cold water until the water runs clear. Soak it in water for at least 4 hours or overnight.

Drain the soaked rice and place it in a steamer lined with cheesecloth or a banana leaf, if using.

Steam the rice over boiling water for about 20-25 minutes, or until the rice is translucent and cooked through.

While the rice is steaming, heat the coconut milk in a saucepan over low heat. Add salt and sugar, stirring until dissolved.

Once the sticky rice is done steaming, transfer it to a mixing bowl. Pour about half of the coconut milk mixture over the rice and mix thoroughly. Let it sit for 10 minutes.

Serve the sticky rice warm with remaining coconut milk drizzled on top. Garnish with pandan leaves if desired.
