Indulge in the vibrant layers of Khanom Chan, a traditional Thai dessert made with fragrant pandan and creamy coconut milk. Perfect for special occasions or a sweet treat to share with loved ones.

Ingredients

  • 1 cup rice flour
  • 1 cup tapioca flour
  • 1 cup coconut milk
  • 1 cup palm sugar
  • 1/2 cup water
  • 1 teaspoon pandan extract
  • 1 teaspoon salt

Method

  1. 1

In a mixing bowl, combine rice flour, tapioca flour, and salt. Mix well to combine.

  2. 2

In a small saucepan, heat the coconut milk, palm sugar, and water over medium heat until the sugar is dissolved. Remove from heat.

  3. 3

Gradually add the coconut mixture to the flour mixture, stirring continuously until smooth.

  4. 4

Divide the mixture into two bowls. Add pandan extract to one bowl and mix well. Leave the other bowl plain.

  5. 5

Prepare a steamer. Pour a layer of the plain mixture into a greased tray and steam for about 10 minutes until set.

  6. 6

Pour a layer of the pandan mixture over the plain layer and steam for another 10 minutes. Repeat the layers until all mixtures are used.

  7. 7

Let the Khanom Chan cool completely before slicing into pieces.

  8. 8

Serve at room temperature and enjoy your traditional Thai dessert.
