Experience the heart of Ghana with Kenkey, a delightful fermented corn dish wrapped in banana leaves. Perfect for a cozy weeknight dinner, it pairs beautifully with spicy stews or grilled fish for a truly authentic meal.

Ingredients

  • 4 cups maize (corn) flour
  • 2 cups water
  • 1 cup fermented maize dough
  • 1 teaspoon salt
  • 4 banana leaves for wrapping
  • water for steaming

Method

  1. 1

In a large bowl, mix the maize flour with water to create a smooth paste.

  2. 2

Cover the bowl with a cloth and allow the mixture to ferment for 2-3 days in a warm place.

  3. 3

Once fermented, add the fermented maize dough and salt to the mixture and stir until well combined.

  4. 4

Divide the mixture into portions and shape them into balls or discs.

  5. 5

Wrap each portion in banana leaves, ensuring they are tightly sealed.

  6. 6

Steam the wrapped kenkey in a large pot with boiling water for about 1.5 to 2 hours until cooked through.

  7. 7

Remove from the pot and let it cool slightly before unwrapping.

  8. 8

Serve with your choice of soup or sauce, such as fish or pepper sauce, and enjoy!
