Indulge in the creamy, caramelized delight of Kazandibi, a traditional Turkish dessert made with milk, rice flour, and a hint of vanilla. Perfect for a special occasion or a sweet end to a weeknight meal.
IngredientsWhat you need
- 1 liter milk
- 1 cup granulated sugar
- 1/2 cup rice flour
- 1/4 cup cornstarch
- 1 teaspoon vanilla extract
- 1 pinch salt
- 1 tablespoon butter
Method
- 1
In a medium saucepan, combine the milk and sugar over medium heat, stirring until the sugar dissolves.
- 2
In a separate bowl, mix the rice flour, cornstarch, and salt together. Gradually add this mixture to the warm milk, whisking continuously to avoid lumps.
- 3
Continue to cook the mixture over medium heat, stirring constantly until it thickens to a pudding-like consistency.
- 4
Once thickened, remove from heat and stir in the vanilla extract.
- 5
Grease a baking dish with butter, then pour the mixture into the dish and spread it evenly.
- 6
Allow the mixture to cool to room temperature, then refrigerate for at least 4 hours or overnight until set.
- 7
To serve, carefully run a knife around the edges of the dish. Invert it onto a serving plate to reveal the caramelized bottom, cut into squares, and enjoy.
