Indulge in the sweet, nutty layers of kanafeh, a Middle Eastern dessert that combines crispy kataifi dough with creamy ricotta and a hint of rose water. Perfect for special occasions or a delightful end to a cozy dinner.

- 500 grams kataifi dough
- 250 grams unsalted butter
- 250 grams ricotta cheese
- 100 grams sugar
- 1 cup water
- 1 teaspoon rose water
- 1 teaspoon pistachios
- 1 teaspoon ground cinnamon

Preheat your oven to 180°C (350°F).

In a large bowl, gently separate the kataifi dough to avoid clumping.

Pour the melted butter over the kataifi dough and mix well until all strands are coated.

In a greased baking dish, layer half of the prepared kataifi dough evenly on the bottom.

Spread the ricotta cheese evenly over the kataifi layer, then top with the remaining kataifi dough.

Bake in the preheated oven for about 30-40 minutes or until golden and crispy.

While the kanafeh is baking, prepare the syrup by boiling water and sugar together until dissolved. Add rose water and let cool.
