Indulge in the sweet and aromatic delight of Kalojam, a traditional Bengali dessert made with chana dal and infused with cardamom and rose water. Perfect for festive occasions or as a special treat to share with loved ones.
IngredientsWhat you need
- 2 cups all-purpose flour
- 1 cup chana dal (split chickpeas)
- 1/2 cup sugar
- 1 cup water
- 1/2 teaspoon baking powder
- 1 teaspoon cardamom powder
- 2 cups oil
- 1/4 cup rose water
Method
- 1
Prepare the chana dal by soaking it in water for about 4 hours. After soaking, drain and blend it into a smooth paste.
- 2
In a bowl, combine the all-purpose flour, baking powder, and cardamom powder. Mix well.
- 3
Add the chana dal paste to the flour mixture and knead into a soft dough. If the dough is too dry, add a little water as needed.
- 4
Divide the dough into small balls, about the size of a marble.
- 5
Heat oil in a deep frying pan over medium heat. Fry the dough balls until they turn golden brown and are cooked through.
- 6
In a separate pan, combine sugar and water to make a syrup. Bring to a boil and then simmer until slightly thickened. Add rose water if using.
- 7
Once the fried balls are done, soak them in the sugar syrup for at least 30 minutes before serving.
- 8
Serve warm or at room temperature, enjoying the sweet, syrupy treat.
