Warm up with a comforting bowl of Kalguksu, a traditional Korean noodle soup featuring handmade wheat noodles, savory chicken broth, and fresh vegetables. Ideal for a cozy weeknight dinner or a soothing weekend treat.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup water
  • 4 cups chicken broth
  • 1 cup zucchini
  • 1 cup mushrooms
  • 2 tablespoons soy sauce
  • 2 green onions chopped

Method

    In a large bowl, mix the all-purpose flour with water until a dough forms. Knead the dough for about 10 minutes until smooth. Cover and let it rest for 20 minutes.

    After resting, roll out the dough on a floured surface to about 1/8 inch thickness. Cut the dough into thin strips to create noodles.

    In a large pot, bring the chicken broth to a boil. Add the zucchini and mushrooms, and let them simmer for about 5 minutes until tender.

    Add the cut noodles to the pot and let them cook in the broth for about 5-7 minutes until they are cooked through.
