- 1.5 kg veal roast (shoulder or leg)
- 2 tablespoons olive oil
- 3 cloves garlic
- 2 tablespoons fresh rosemary
- 1 tablespoon fresh thyme
- 1 cup beef broth

Preheat your grill to medium heat (about 180°C/350°F).

Season the veal roast generously with salt and pepper.

In a large cast-iron skillet, heat the olive oil over medium-high heat. Sear the veal roast on all sides until browned, about 3-4 minutes per side.

Remove the veal from the skillet and place it on the grill. Add the minced garlic, rosemary, thyme, and quartered onion around the roast.

Pour the beef broth into the skillet and bring it to a simmer. Use this to baste the veal roast every 30 minutes during cooking.

Cover the grill and cook the veal for about 1.5 to 2 hours, or until the internal temperature reaches 70°C (160°F).

Once cooked, remove the veal from the grill and let it rest for 15 minutes before slicing.
