- 1 kg lamb or beef tenderloin
- 1 large onion
- 1 cup plain yogurt
- 2 tablespoons saffron threads
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1 teaspoon black pepper
- 4 skewers metal or soaked wooden skewers

In a large bowl, combine the grated onion, yogurt, saffron water, lemon juice, salt, and black pepper to create the marinade.

Add the lamb or beef strips to the marinade and mix well to coat all the pieces. Cover and refrigerate for at least 2 hours, preferably overnight.
