- 2 cups long-grain parboiled rice
- 1 cup vegetable oil
- 1 large onion, finely chopped
- 1 cup tomato puree
- 2 cups water or chicken broth
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 teaspoons cayenne pepper
- 1 cup mixed vegetables (carrots, peas)

Rinse the rice under cold water until the water runs clear, then soak it in water for about 30 minutes before cooking.

In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.

Stir in the tomato puree and cook for about 10 minutes, allowing the mixture to thicken and the oil to separate.

Add the soaked rice to the pot, and stir well to coat the rice with the tomato mixture. Then, add the water or chicken broth, salt, black pepper, and cayenne pepper.

Bring the mixture to a boil, then reduce the heat to low. Cover the pot tightly and simmer for about 25-30 minutes, or until the rice is cooked through and the liquid is absorbed.

Add the mixed vegetables to the pot, fluff the rice gently with a fork, and cover again. Allow it to steam for an additional 5 minutes.
