Savor the comforting flavors of Jjimdak, a Korean braised chicken dish simmered with tender potatoes, carrots, and aromatic spices. Perfect for a cozy weeknight dinner that warms the soul.
IngredientsWhat you need
- 1 kg chicken
- 200 g potatoes
- 100 g carrots
- 1 cup onion
- 1 cup soy sauce
- 100 g Korean rice wine
- 2 tablespoons sugar
- 1 tablespoon garlic
- 1 tablespoon ginger
- 2 green onions chopped
Method
- 1
In a large bowl, combine the chicken pieces with soy sauce, Korean rice wine, sugar, minced garlic, and ginger. Marinate for at least 15 minutes.
- 2
In a large pot or skillet, add the marinated chicken along with all the marinade. Add the potatoes and carrots, mixing well.
- 3
Pour in enough water to just cover the ingredients, then bring to a boil over medium-high heat.
- 4
Once boiling, reduce the heat to low, cover, and let it simmer for about 30 minutes, or until the chicken is cooked through and the vegetables are tender.
- 5
Uncover and let it cook for an additional 5-10 minutes to thicken the sauce, stirring occasionally.
- 6
Serve hot, garnished with chopped green onions on top.
